Wow, what a week and a few days it has been.
I had some stress, but I managed to eat crap and cope instead with writing. I am actually quiet proud of that.
So things I have noticed so far.
I put on my pants this am and I didn't have to suck in to button and zip them. I noticed my t-shirt wasn't to tight around my arms.
I also noticed that it's been over a week that I took a nap in the afternoon. I am not nearly as tired as I used to be come 2pm.
I ate at a restaurant and I still lost weight. I am drinking a lot more water and hence my bathroom breaks are more often which equals more walking time. I think my kidney's are like WTF? Why do we suddenly have to work so hard? Cause I used to be able to go all day without drinking anything but 2 cups of coffee.
Going low carb is not as hard as I thought it would be.
I do see my goal and it's actually more of a pants size than a weight loss. I wanna be a 12 maybe even a 10 and I will be happy. Last time I did this in 8months I know I can do it again, I just don't know how long it will take.
The Body Combat program is 60 days, so we'll see.
2014 came and went, I dealt with health issues and looked like a beached whale in my pictures. Well NO MORE, I ordered The BODY COMBAT DVD's and loving them.

Eating Healthy while camping at the Renaissance Faire...
So of all things I am the Chocolate Fairy out at Sherwood Forest Faire. This is my second year doing this, I was working at a booth the 3 years before that. But anyway, so last year I ate not that great out there, I had Faire food most of the time and well it just wasn't that healthy.
This year I made a change, and it helps that my friend Angela, is close and we help each other remembering that we do need to eat...
So Here are a few things that have helped me to eat better out there.
Breakfast:
I precook egg scramble, with Turkey sausage, egg whites, veggies (whatever I have, this weekend it's mushrooms, bell peppers), I can heat those up in a microwave in a trailer and make Breakfast Tacos. Yeah I know the Tortillas are not the best, but hey I am about to walk 7 miles.
This week I am also bringing Chia Pudding, cause they are yummy and I can either eat them as breakfast or a snack.
Lunch:
I either have a sandwich on a sandwich round or a Salad in a Jar... We also started to do a character lunch inside the fair and I usually have some fruit, lunch meat and cheese.
Dinners:
Friday we eat at home and then leave...So we get to the Fair before 10pm just in time to go to bed.
Saturday one of us usually make a big one pot meal and people bring stuff to add on. This weekend we'll have a veggie stew with Tofu (not sure about that) and Angela is making her super yummy turkey chili. Which I probably will eat.
Snacks:
This is the important thing... we have fruit, grapes are always good, strawberries, and tangerines. Then I also have protein bars and I made some energy bites.
So if you make an effort, you can definitely eat healthy Camping at the Fair.

Gluten Free (I hope) and Low Carb Shepherds Pie
So I wanted Shepherds Pie, but cause I am trying to stay away from starchy foods, the Potatos were not an option. So I was thinking of this all afternoon and then had the Idea. I made fake mashed potatos before with Cauliflower. Well guess what? I went to the store and got Cauliflower and frozen corn, cause those where the only two things I did not have.
Fake Mashed Potatos:
Cut the Cauliflower into pieces and boil them till very soft, drain. Add a tbsp of butter and season then use your handmixer and mash them up like you would potatos. Don't add milk, since the Cauliflower is a veggie, it still has some liquid in it.
Meat Filling:
Brown ground beef (I used grass fed, that I got a sprouts the other day), season with what you feel like, I usually trow in some mushrooms and carrots but didn't today. Then make a brown Gravy, I am spoiled I have a sauce my mom brought me from Switzerland it's called "Braten Sauce" and it's from Knorr. But regular Brown Gravy will work.
So then you get a deep oven safe dish, heat oven to 350F, put the meat mixture in, then the bag of frozen corn, then the Caulifower Mash and top it with Cheddar Cheese.
Put in the oven for 30minutes and enjoy.
Both my kids and my husband got seconds. So there something healthy.
