Winter this year here in Texas has been weird. We had more than usual freezing days. Today is one of those days and it is March...
So I was sitting in my office working when I got a hankering for Lentil Soup. It's something that reminds me of my childhood. We used to get the canned Lentil Soup from Germany (as I am from Switzerland, Germany was only 20mins away)... and my mom would cut up hot dogs and put them in. I always loved that soup and I made many variations of it.
So I braved the cold and got the stuff I needed for my Soup... and this is not a runny soup it is thick and hearty cause that is how I like it.
Here is what went into the pot today:
1 box of organic Beef Broth (4 cups)
1 yellow onion chopped
3 celery stalks chopped
4 medium carrots, peeled and chopped
8 slices of Turkey Bacon
3 cups of uncooked lentils
12 ounces of organic pork Kielbasa (optional)
4 cups of water
First you heat ups some oil, I use coconut oil. Sautee the onions and the celery, once they are glassy looking add the bacon, cook for a couple of minutes. Then add seasoning. I like salt and pepper and thyme. You can use whatever you like. Then add the lentils, I gave them a quick rinse and mix them up. Then add the broth and 4 cups of water, add the carrots and let this simmer for a bit. You might have to add more water as I let mine simmer all afternoon I know I need to add more water, as the lentils will absorb it.
Then about an 30mins before you eat add the kielbasa... This makes about 12 servings.
1 Serving is: 212 calories, 9grams of fat, 2.5g saturated fat, 24 Carbs, 12g of fiber, 4.4 sugars and 19g of Protein. Pretty dang healthy.
